Raspberry Gelato Recipe

Let’s face it. There is nothing like enjoying some delicious ice cream on a hot summer’s day – a creamy, cold treat that you can share with friends or family as you enjoy the many additional hours of beautiful sunlight the summer months bring.

The only downside is that traditional ice cream is packed with either lots of saturated fat, added sugars or artificial ingredients.

Now for someone that loves her ice cream, I used to be pretty bummed out – that is, until I found some suitable natural and healthy alternatives.

Bananas can turn into a frozen treat, and there are many nut versions usually made with cashews. Those are very delicious alternatives, but if you are not a fan of bananas, or if nuts make you feel too heavy, this is a great nut-free gelato made with avocados and raspberries. I know what you are thinking, “Gelato made with avocados? No thanks…”

That’s what I thought too, until I tried it. It’s cold and creamy, and the consistency resembles a mousse. I was pretty impressed. And so glad that I decided to go ahead and try it.

Besides being unbelievably delicious, it’s full of healthy fats from the avocado and lots of anti-oxidants from the berries. And since it calls for stevia, it’s extremely low in sugar.

So this summer, the next time you get a craving for ice cream, make sure that you have a couple of ripe avocados ready so that you can whip up some of this delectable dessert!
